Couscous & Chickpea Salad

Serves 2
 

Ingredients

2 cups wholemeal couscous 

2 cups of cooked chickpeas 

3 tomatoes chopped

1 red or yellow or orange pepper

Zest of 1 lemon 

Tsp of cumin 

Paprika 

Juice of 1 lemon or lime 

Quarter finely sliced red onion and a couple of finely sliced spring onions. 

Lots of olive oil, freshly ground pepper, salt 

Fresh coriander leaves, parsley and mint as much of these as you have to make a lovely colourful and tasty  salad 

Top with toasted sunflower seeds 

 

Instructions

 

Cover couscous in boiled water, cover. Leave to absorb for 5 mins and then fluff with a fork.

 

Add all the other ingredients.
