Sunflower Mince Bolognaise

This is an amazing vegan mince made from the residue of sunflower seeds after sunflower oil is taken. It’s organic with no added ingredients.

 

NO soaking required.

 

Can be topped with mash potatoes to make fab shepherds pie too!

 

Ingredients

​

1 large Chopped onion

1 Chopped leek 

4 cloves of Chopped garlic 

2/3 tsps each of paprika, oregano, little pinch of chilli powder 

1 large grated carrot 

A few glide of red wine 

A squeeze of agave 

6 tablespoons of tomato paste 

600ml water 

100g sunflower seed mince 

300ml passatta 

Any fresh herbs to add at the end: coriander, parsley, basil

Instructions

 

Sauté the onion and leek till soft on low light, add garlic and spices and cook a couple of minutes.

​

Add grated carrot and coat with onion, let soften by cooking 10 mins or so. 

​

Add red wine and agave and let cook off for 5 mins. 

​

Add the tomato paste, the water, and the mince. Then when all mixed, the passatta.

 

Can cook for 10 mins and ready but the longer you leave it the richer the flavour and better texture.
